A Healthy Food to Add in 2012
Don’t know what Chickpeas are? Its a little protein packed legume which makes up the ever popular hummus. Yum right! Well here are a few ideas on how to use these nutritious peas in other ways.
- Salad Dressing: blend ½ cup cooked chickpeas with 1 peeled, pitted, and sliced avocado, ½ cup plus 2 tbsp apple cider vinegar, 1 tsp minced garlic and ½ cup extra virgin olive oil, ¼ tsp ground cumin, and sea salt and fresh ground black pepper to taste
- Sandwiches: partially mash a few tbsp cooked chickpeas and spread on one slice whole grain bread, spread the other slice with light cream cheese, top with whatever vegetables you have in your fridge, and enjoy
- Main course: braise cooked chickpeas with onions, tomatoes and kale and serve over cooked quinoa or couscous
- Side Dish: Sauté Swiss chard and garlic in olive oil and toss together with cooked chickpeas for a quick side
